Well I suppose I have to mention it…. Christmas, Personally I love Christmas, apart from Christmas cards…. I hate them.
Love getting them but hate writing them. For years I would get so stressed about getting my Christmas cards written. There were always so many to do, I would keep putting it off and putting it off until the very last minute and then I would be forced to write them.
But then…… they had to be delivered, some could be posted but lots of them had to be delivered/given to people.
There was my family, mums, sister, grans and granddads, aunties and uncles, cousins, nieces and nephews, close friends, friends, neighbours, work colleges, business contacts, clients OMFG the list is endless, there were hundreds!
I live in a street with 18 houses and every one of them gives us a Christmas card ahhhhhh.
So four years ago I decided that the #1 thing I hated about Christmas was writing these fricking cards, what was the point in doing it when I resented ever single card I wrote?
But what would people think if I didn’t do it?
I would be criticised for not sending cards, people would make up reasons why I hadn’t sent them a card? People would resent the fact they were giving me a card and weren’t getting one back! People would talk about me behind my back, they would say I wasn’t very nice/friendly, that I was stingy, oh my head hurt thinking of the things they would say!
So I continued to write cards for two more years!!! But then two years ago I decided I just wasn’t going to send any Christmas cards, and let me tell you the relief was amazing!
It was a HUGE weight off my shoulders! But what about what people would think of you I hear you cry…..well those that mattered wouldn’t mind and those that minded wouldn’t matter, and I was okay with that.
Why am I telling you this?
Because I want you to take some time to really think about Christmas and all the things that come with it, what parts do you love? What parts do you dislike? What parts stress you? What parts warm your heart? Then let go of all the things that you don’t like or that stress you out and do way more of the things you love!
Don’t think of Christmas as a chore think of it as an amazing time of year full of wonderful things!
Make yourself happy first then everyone around you will feel happier!
Don’t be afraid that people will be upset, they won’t because there to busy thinking about all the things they hate about Christmas but still have to do.

Hers a nice easy recipe you can stick in the slow cooker and it’ll be ready for you coming home.
Beef and Vegetable Casserole
• 1 tbsp coconut oil/olive oil
• 1 onion diced
• 1 leek diced
• 1 carrot diced
• 2 celery sticks diced
• 2 garlic cloves crushed
• 75g mushrooms sliced
• 500g braising steak cubed
• 2 tbsp gluten free flour
• 750ml beef stock
• 2 tbsp tomato puree
• Few sprigs thyme (or mixed herbs)
1. Heat 1 tbsp coconut oil in a large pan then add the onion, carrot, leek, celery and garlic, and cook gently for 5 minutes, do not brown. Add the mushrooms and cook everything for a further 5 minutes then remove from the pan. Heat a little more oil in the pan, add the beef (in batches if necessary) and brown all over then stir the flour in well.
2. Return the veg to the pan and add the thyme, stock and purée. Season and mix well.
3. Bring to a gentle simmer and cook covered for 1 1/2 hours until tender, stirring occasionally. Or, cook in casserole dish in oven at 150 (fan assisted oven) for approx 2 hours.
Alternatively you can shove it all in a slow cooker on low for about 8 hours (Tesco and Argos have slow cookers for £9)
