Enjoy this Packed Protein Salad

We haven’t had the best weather here over the summer but that doesn’t mean you can’t still bring the sunshine inside.

Salad doesn’t just have to be eaten during the summer months and because it is full of essential vitamins and nutrients you should really be eating some form of salad throughout the year.

Salads can consist of many types of food and they are really fun recipes to create yourself so why not gather up some ingredients and create your own salad; just remember to ensure it’s also protein packed!

As I’m the helpful type, I’ve made things easy for you here with this packed protein salad recipe.

Serves: 2
Prep time: 15 minutes


1 serving quinoa cooked and cooled
4 cups small leaf mixed green salad
½ cup black beans
½ cup red pepper diced
2 small tomato diced
½ small red onion diced
1 small avocado peeled, de-stoned and diced
¼ cup pumpkin seeds


¼ cup fresh lime juice
½ tsp cider vinegar
1 tsp minced garlic
½ tsp mustard


Cook the quinoa and allow to go cool. Wash the salad leaves! Place all of the salad ingredients in to a bowl and toss together. Place the dressing ingredients in a blender and blend until smooth. Share salad into two bowls, drizzle over the dressing and sprinkle on the pumpkin seeds.

Always make sure that your salad ingredients are crisp and fresh so you get the best health benefits out of the ingredient. Try to buy in season too and get organic where ever possible.
