Minestrone soup is one of the best winter warmer recipes you can eat.
With the colder weather moving in you’re going to thank me when you’ve got a big bowl of this soup to keep you warm and healthy.
Makes 4 servings
Prep – 15 minutes
Cook – 12 minutes
1 tablespoon extra-virgin olive oil
1 Large carrot – peeled and diced
3 Celery sticks – ends cut off, washed and sliced
1 Medium courgette – ends cut off, washed and diced
1 Medium yellow onion – peeled and diced
1 Large garlic clove – peeled and minced
1 Can (organic) cannellini beans – drained and rinsed
3 Large tomatoes – core removed and diced
½ Cup baby spinach – washed and drained
1 Vegetable stock cube (organic) – add a little hot water to dissolve
½ Cup small sized (organic gluten free brown rice) pasta
Take a large saucepan
Pour in the olive oil and heat on a medium heat
Add in the celery, onion, carrot and zucchini and stir until softened (approx. 5 mins)
Add garlic, tomatoes and spinach and stir for a further 3 minutes
Add in the beans, the dried pasta and the stock
Pour on boiling water to cover all ingredients and leave to simmer for around 10 minutes
